Louisville

Just got back from a wonderful weekend in Louisville! We did so much, but it was a blast! Can't beat great weather, good food, and family!

We ate at Tom and Chee for lunch Saturday. I hit up the Chicken, Bacon & Ranch but added avocado and tomato. Delicious! 




As much as we love family time, I think Snoopy was a little over it halfway through the weekend. I couldn't find him and started to panic a little, but he was just chilling in his kennel! Hello, introvert! 




Sunday morning, Hubbs and I snuck away to explore the Highlands area of Louisville. This pug mural is pretty much perfection. 




Then we stopped for coffee at Quills... delicious! 




I guess the Highlands is the place to be on Saturday night because at 10 AM on Sunday morning, there were still people passed out on the sidewalks. Don't worry- they were breathing! 




I think this guy almost made it home? So close. I think this is where I want to party.




Sunday we headed out to Claudia Sanders for lunch.




I have forgotten how much I love KFC food. Seriously. It used to be a staple at family get togethers. My grandpa always brought the bucket of KFC chicken. We even had it at our wedding reception to remember him by. Needless to say, I chowed down. I couldn't get enough chicken, coleslaw, and mashed potatoes and gravy. I'm drooling now just thinking about it again. 




My sister-in-law gave me this awesome care package. So thankful for wonderful family who know me so well! Those Cheetos won't last long.




Monday morning, we woke up really early. Snoopy was so happy to be included on this outing!




We drove out to Deam Lake and hit the trails. Such a gorgeous area- I can't wait to go back!




It was a short hike- wish we could have stayed out all day!




Seriously- this lake is calling my name. I am dying to get a paddle board out there!!




After our quick hike, we headed to Wild Eggs in downtown Louisville for breakfast. I had the Mr. Potato Head Casserole. So delicious!! 




Such a great weekend with family- the weather was beautiful, food delicious, and company even better. It's been hard to get back at it today, but here we are- plus I saved Bachelorette to watch for tonight- that'll get me through the day!

Fun! Fun! Fun!

Kicked off Friday at work with my favorite breakfast. Hashbrowns topped with gravy. So delicious.




Saturday, we ran some errands. I got a little hungry, so hopped over to Mama Jeans while Hubbs got his hair cut. This chocolate coconut peanut butter caught my eye. 




Then, we headed over to Sequiota Bike Shop for some lunch. I had a bacon, apple, and cheese sandwich. It was delicious. We loved hanging out on their patio and relaxing in the gorgeous weather.




After lunch, we rented some bikes from Sequiota Bike Shop and hit Galloway Trail. We were able to ride out to the bridge over the James River. Such a gorgeous day!




Ran some more errands after our bike ride and ended the afternoon with refreshing beverages at a gas station. I splurged for a slushie. It hit the spot!




Sunday was very low key. We just stayed at home and relaxed. We did venture out for a walk and ended up locking ourselves out of the house. Thankfully, my dad came to the rescue and helped us finagle our way in without breaking any doors or windows! Crazy end to a fun weekend. 




Counting down the days until next weekend when we head to Louisville, KY to spend the long weekend with family!

Fast Weekend!


This weekend went fast! We kicked it off Friday night by going to a Springfield Cardinals game with some friends. I was much more excited for the fireworks after the game!




And then I finished off the night with some Cookie Dough Dippin' Dots. I'm hooked right now. I have a feeling these will be my summer obsession! 




Saturday morning, we had a garage sale!! It felt so good to clean out all our closets the last couple of weeks, and we even made some decent money. Good morning well spent!




This guy was a huge help... or not...




Saturday night, we hit up Gem of India for date night. I love this place!! Plus they had a good Yelp deal that helped the decision. 




I have no idea what those sauces are, but they are good! Shrimp masala is my absolute favorite. I can never get enough of it! 




Sunday morning, Hubbs surprised me with breakfast. I haven't been able to stop thinking about Peanut Butter Fingers' talk of eggs and Laughing Cow wedges, so he whipped up some of that for me along with bacon and watermelon. Definitely a great start to our Sunday! 




Speaking of Peanut Butter Fingers, I can also thank her for the introduction to La Croix. Target had a sale on them last week, so I stocked up. So far I'm loving the cantaloupe/grapefruit one. Wonder how long these will last me? Okay, basically I have Peanut Butter Fingers to thank for a lot of awesome things in my life. I love her blog, so check her out for yourself (link above). 




Spent the afternoon yesterday meal prepping. Homemade bacon and ranch pasta salad, hummus and red peppers, and yogurt with blueberries. 




And for breakfast this week- pumpkin yogurt oat muffins! I think this rainy weather put me in the mood for fall. I added some cinnamon to my coffee this morning, and it hit the spot!

Get Outside!

The weather this week has been gorgeous! I'm so ready for summer.

Tuesday after work, I took the dog out for a nice little walk. I decided to ignore my phone and just unwind. Much needed!

Yesterday, I hit the trails at work after some weightlifting. Thankful that it's so easy to workout during work! 




Apparently, I overdid it on the weights yesterday- because I am super sore today. So, I hit up Sworkit for some yoga to stretch out my muscles. That hit the spot. 




Excited to be outside this weekend too. Baseball game Friday night. Garage sale Saturday. It's gonna be busy!

Dogwood Canyon

Get me outside!! That's my general feeling of the week. So bestie and I roadtripped down to Dogwood Canyon south of Branson, Mo. GORGEOUS. Couldn't have asked for a better day! Just wish I would have taken more photos, but I was trying to soak it all in!



So many waterfalls! This one below was actually in Arkansas!




We hiked all the way to Arkansas! Okay... it was only a 7 mile hike round trip, but still- Arkansas!




Kicking myself for not exploring the new tree house. They've also added a mill, a restaurant, and a bar. Can this place get any better? 




And of course- the bestie. Doesn't get any better than that. Great friend, great conversation, great day!

San Antonio Continued..

Started off Wednseday morning with sunrise yoga. Great instructor, but a tad chilly out. Still felt good to stretch and clear my head before a busy day!

Snack break in the middle of all my meetings. I couldn't resist! These are my favorite. 


Reward for a long day of meetings? A massage at Lantana Spa. It was fabulous! 


After a relaxing evening, I decided to stay in again. Chicken strips hit the spot. 


Thursday morning, I was up bright and early for a run. The weather couldn't have been better. I love when hotels have jogging maps like this one. So handy! 


Seriously- the weather was perfect.


Cactus! 


Now catching a late flight home and am ready to be snuggled in my own bed with my little family!

San Antonio

Another week at work! Thankful for no flight delays for the first trip so far this year. Not even kidding!



Loving my room at the JW Marriott. It's secluded but nice. Easy to relax here.




So much so that I just wanted to relax in my room!




Hello, room service. Quesadilla was a little weird- smoked chicken wasn't doing it for me. The cheesecake, on the other hand... 




Never stood a chance. Not bad for a Tuesday.

Another Busy Weekend!

We kicked off the weekend a little early, on Thursday night, for the NFL Draft. We hit up Buffalo Wild Wings for some nachos and football action. I can't wait until it's football season again!!




Friday night was cold and stormy, so we just stayed at home. I relaxed with some candles, and this hot chocolate that totally hit the spot. 




Saturday morning, I headed out to the Girls on the Run Spring 5k. Thankfully the rain held off, and I had a great run with my buddy. I love being a part of that organization. It's so fun to see the girls get so excited about running and to watch their self esteem grow.

Hubbs surprised me with another date night Saturday even though we went out Thursday. We hit up dinner at The Order. I was too hungry to think about photos- but we polished off some burgers, fries, and their amazing duck aioli. I had way too much. Don't even care.  



For dessert, we hit up Andy's for custard. I had cheesecake and cookie dough. Talk about being in my happy place. Then, we were driving home and saw that one of the local fireworks stores was doing a display that night. So we found an empty parking lot nearby to finish our ice cream while watching fireworks. Best date night ever!!




Saturday morning, we hit up brunch with my bestie at the Aviary. Again, too hungry to think about food photos. Then, we hit up the trails at Galloway. It was a great weekend to be out and about! 




A great weekend- now off to San Antonio to work, work, work, work, work!
